being my first time making salsa, (ever) i thought i would go easy on myself and choose a simple recipe that promised great results. this was definitely the case with this recipe (taken from "The Clueless Vegetarian"). it was easy to make and i fell in love at first bite. (before you think i'm full of myself, know that i'm not lauding my cooking skills but rather the skill of the cookbook's talented author, Evelyn Raab ;)) i plan on making this recipe again this summer, maybe doubling it and serving it with fresh tortillas (unlike the flatbread pictured-not the best choice) and lemonade! mmm...
chunky avocado salsa
2 large, ripe avocados, 1 small red onion finely chopped, 2 Tbsp. lime juice, 1 medium tomato seeded and finely chopped, 1 fresh jalapeño pepper seeded and finely chopped, 1 tsp. ground cumin, 1/4 cup chopped cilantro, 1/2 tsp salt
cut avocados in half, remove pit and peel them. dice the avocado flesh and dump in bowl. add all remaining ingredients and toss to combine without mashing. ingredients should remain separate and the salsa chunky. serve with tortilla chips for dipping. yield: 2 cups
